I'm just posting this up here because if your like me you don't eat enough cruciferous veggies and probably didn't even think of coleslaw. I hate how little nutrients lettuce has in it, spinach isn't as crunchy and its a pain in the ass to cut up all the veggies you need to put in your salad to make it worth eating, plus it doesn't stay well in the fridge.

Its dirt cheap to make, packed full of nutrients, tastes great and if you make a great big batch it will stay crunchy and tasty in the fridge for about a week. $1.50 should make you enough to stuff your face with large portions for a week. **** cutting up veggies and preparing a dinner salad every night, or waiting for broccoli to cook only to have to wash the pot after dinner. Just grab a heap of coleslaw from the fridge and shove it in your pie hole.

The dressing for this one is just a simple vinaigrette that you can make in about 30 seconds, tastes great and doesn't add much garbage to the recipe.
